As the seasons change, so does the menu at Birmingham hotspot, Brightsmith on the Water at Hilton Birmingham Metropole. As it begins to get colder and the night’s darker, it’s the perfect time of year to treat yourself, and with an exciting and colourful new menu to enjoy, Brightsmith on the Water is the perfect place to do so.

The food at Brightsmith on the Water is as special as the restaurant’s glorious lakeside views and glamourous interiors, with wonderful plates curated by the award-winning Chef Peter Daley and his team.

Guests can look forward to dishes such as Crusted Calamari with sumac, pineapple, pomegranate, coriander salsa, molasses and lime; Twice Baked Gruyère Cheese Soufflé, mushroom sauce, crispy autumn salad and Pan Fried Seabass with crayfish, saffron cream sauce, spinach & samphire, and crispy potato strings.

All produce and ingredients are selected very carefully at Brightsmith on the Water, dedication to seasonal and high-quality local produce. Their beef for example is sourced from Casterbridge and Aubrey Allen.

Casterbridge steaks are the result of a decade long pursuit of perfectly dry aged beef, bred in the west country region of England. Their beef is a minimum of 21 day aged and moulded in Himalayan rock salt which breaks down the fibres in the meat to create the perfect steak. These are available to order in Rib Eye or Fillet. Aubrey Allen is a third-generation family local butcher, within 12 miles, who have grown their reputation as the leading supplier of ethically sourced, naturally produced meat. Known nationwide as the chef’s butcher, having been five times winner of the Chef’s Choice Butcher award. These are available to order as a flat iron steak or a sharing cote de boeuf. All steaks served with grilled vine tomatoes, Portobello mushroom and triple cooked rosemary and garlic chips. With a choice of peppercorn, mushroom or béarnaise sauce.

There’s always a fabulous selection of wines and cocktails at Brightsmith on the Water. Guests could go for a Brum Brûleé - Plantation White rum and Campari well shaken with pineapple and fresh lime juice. Sweetened with a dash of sugar syrup and garnished with a caramelised - dehydrated pineapple wheel and Smoked Cherry Wood Old Fashioned - The Brightsmith twist to the classic ‘Old Fashioned’. Woodford’s Reserve bourbon stirred with Angostura bitters and demerara syrup. Sprayed with orange oil and smoked with cherry wood chips.

Open Monday-Sunday from 5pm until midnight, it truly is the spot for a bit of indulgence and colour in these upcoming greyer months.
