He and his two business partners opened Opus at Cornwall Street, a 2 AA rosette restaurant, in 2005 in the heart of the Colmore Business District. CAFÉ OPUS was opened in February of this year. Independent and market fresh, David’s modern British menus showcase the best that the British Isles have to offer. The quality of raw ingredients shine through dishes that are simple, yet bursting with flavour. Representing an outstanding commitment to seasonality and freshness, David’s menu changes daily reflecting what he has bought from the markets every morning.
A graduate of Solihull College, David trained under Anton Mosimann at The Dorchester Hotel in London, and moved on to the Lygon Arms in Broadway. Then, after helping the Swallow Hotel in Birmingham to secure the city’s first and only first 5 star hotel status, he moved on to create a talented team in Birmingham’s first, ground breaking large scale quality brasserie and bar, embracing responsibility for the group’s two London restaurants as well.
A member of the Academy of Culinary Arts, David takes an active role in developing local talent, working closely with the University College Birmingham with placements for young chefs. In 2009, UCB conferred upon him the title of Honorary Fellow of University College Birmingham, for his work in nurturing young chefs and promoting high quality locally sourced produce.
In addition, on behalf of the Academic Board of UCB, he was made UCB’s first Visiting Professor of Culinary Arts in recognition of this contribution to the enhancement of learning and the development of hospitality education.

Independent and market fresh, OPUS AT CORNWALL STREET celebrates beautiful British produce through their daily changing menu which allows the flavours of the top class ingredients to shine through.
Their a la carte menu features, for example, Cornish lamb from Launceston, fish fresh from Brixham market, beef from the single estate grass-fed herd in Aberdeenshire and Worcestershire/Warwickshire cheeses, fruits and vegetables.
Every day they offer a set price Market Menu at £9.50 for one course, £12.50 for two, and £15.50 for three courses….How do they do it? Representing an outstanding commitment to the best seasonal ingredients.

Through their acclaimed dinner series, customers meet the passionate family of farmers and fishermen who supply them.
The kitchen’s fondness for provenance shows in its regular dinner series and special events, highlighting British food heroes.

Our Kitchen Table, established in 2009, is the equivalent of culinary theatre, allowing diners to get the full sounds, smells and sights of a professional kitchen at work while enjoying a five course tasting menu.
Opus are located in the heart of Birmingham city centre’s Colmore Business District. The décor is chic, but warm and inviting, with natural light which streams in from the glass frontage. Their service is professional but friendly. They also have two private rooms for intimate dinner parties or larger events.
