Head Chef – Searcys @ The REP
Stephen is Head chef at Centenary Bar and Brasserie, he has been there from the beginning when the restaurant opened its doors in August 2013 within the iconic Birmingham REP Theatre at Centenary Square on Broad Street.
Stephen’s menus reflect classic British dishes with modern twists and they use an array of small bespoke suppliers to deliver top quality ingredients ranging from Lake District meat and fresh Brixham fish to Westland’s micro herbs. He changes his menu monthly so there is always something new to experience.
After graduating from Burton College, Stephen trained under his father John (who taught him the importance of letting good ingredients speak for themselves) and took up his first position within the then privately owned Newton Park where he had his first real taste of what great ingredients really had to offer.
Once he got to the top, he took time touring local schools spending time with seniors to teach them about the great things food has to offer; getting them excited about the industry.
He moved to the prestigious caterer Searcys in 2013 and has spent the last 10 months getting the restaurant up and running with a team of both experienced and novice chefs as he is a firm believer in giving young fresh talent the opportunity to work in a really quality environment.
