Announcing New Head Chef at The Edgbaston
Olivier Briault has joined the team at The Edgbaston as Head Chef, formerly Pastry Chef of Simpsons Restaurant and Opus Restaurant in Birmingham.
Having grown up surrounded by pastry his father and grandfather are both pastry chefs, with his father having given him his first apron and hat when he was three, it therefore seemed the natural career choice for French pastry chef Olivier to make. Having gained experience in various pastry schools back in France Olivier made the decision to move to the UK to further his passion.
Afternoon Tea at The Edgbaston has been delighting guests since May and Olivier is now taking it to the next level. With special seasonal influences, currently the Halloween Afternoon Tea available until Sunday.
Olivier is deeply passionate about creativity and variety, he loves to make people happy with his creations:
the look on someone's face when they have a first bite of a fantastic dessert is priceless. So whatever I make I put my heart and soul into it. It helps that I have a sweet tooth and adore anything made of chocolate and sweet.
